This stunning blue drink with strong floral flavours should undoubtedly be one to try. £8.00 Hot Sugar - a drink which name comes from the taste, created for a national competition by Symeon White; this drink was created with a regular customer at the Seattle, who enjoys the warm feeling of whisky. Balancing 3 distinctive flavours uses Glenrothers whisky, Cherry Heering, chilli, brown sugar and a dash of crème de cacao. Presented in a whisky glass and cubed ice. £9.00 Sapphire Flower – created for the Bombay Sapphire Inspirations competition by Tim Garratt in 2008. This unique drink isn’t just fabulous because of its balanced flavours of Bombay Sapphire, fresh lemon, elderflower, liquorice and coriander but because it is served its own specially made glass called the Bombay vine. With the combination of the drink and the glass Tim made it in to the UK Grand Final. £.8.00 Royal Fashion - this was Iveta’s first drink created at the Seattle. It was invented for the 2008 Belvedere vodka regional competition. It consists of Belvedere vodka, a vanilla and rye infused sugar syrup, lime zest, and a dash of Canadian Club rye whisky. Based on an old fashioned this should be enjoyed slowly so the flavours can truly be appreciated. £9.00 VODKA French Martini - This has a fantastic combination of French black raspberries and pineapple juice, with raspberry vodka as the base. It’s a short, delicious fruity drink served in a cocktail glass and is extremely enjoyable. £7.00 Cosmopolitan - Originally created in the 80’s but didn’t become popular until seen on “Sex In The City”. The “Cosmo” balances citrus, fruit and sweetness perfectly. However because of the Cosmo’s great success it has become very common so please ask your bartender for a twist on this classic drink. Our Cosmopolitan is made with citrus vodka and Cointreau, with added cranberry juice & fresh lime. £7.00 Palookaville - a drink created for Fat boy slim (Norman Cook) by Brighton’s own Chris Edwards. With the combination of Zubrowka vodka, apple schnapps, elderflower cordial and organic apple juice you have a recipe for a refreshing drink with hidden subtleties. £7.00 Summer Breeze - a variation on the classic sea breeze using Absolut vodka, mixed with cranberry, apple juice, elderflower cordial & fresh lime. As the name suggests, a drink that takes you away to those perfect, chilled out sunny afternoons. Try a country Breeze which uses Bombay Sapphire gin, apple juice, lime and crème de cassis lace. £7.00 Life’s Good - a fruity drink made with Absolut vodka, sloe gin, lychee liquor, strawberry and cranberry juice with a touch of lime. As the name suggests a drink that makes you feel good, served in a martini glass. £7.00 Moscow Mule - was made in 1941 by John G. Martin, a food and spirit distributor on the east coast of America and Jack Morgan who owned the Cock & Bull saloon. John had just ordered a vast amount of Smirnoff vodka and Jack had a great deal of ginger beer soon to go out of date together they made the Moscow Mule that is now enjoyed world wide. The drink is made of Absolut vodka, lime, angostura bitters and ginger beer. £7.00 Bloody Mary - created by Fernand Petiot, an American bartender at Harry's New York Bar in Paris during the 1920's, who simply mixed vodka with tomato juice. When Petiot moved to the King Cole Bar at the St.Regis in New York, he brought the recipe with him. Sophisticated New Yorkers urged Petiot to spice up the drink because it was too bland. He added black pepper, cayenne pepper, Worcestershire sauce, lemon, and a generous splash of Tabasco. Please do not be put off by the fact that one of the ingredients is basil leaves. Here at the Seattle we spend a great deal of time making drinks as close to perfect as possible and we believe that we do a good job do so, therefore please try this fantastic drink for yourself and let us know your opinions. This drink consists of Absolut vodka, Grand Marnier, Chambord, fresh strawberries, cranberry juice and basil leaves. £7.00 GIN Martini - the origin of the martini is disputed and shrouded in mystery, but a widely accepted account is that it is a descendent of the Martinez, created in the late 1850s by Jerry Thomas from the Occidental Hotel in San Francisco. The Martini was an established American cocktail in the beginning of the 20th century. This cocktail uses Plymouth gin and your choice of vermouth, having it wet or dry, dirty or with a twist. For a little more have it made with a premium gin of your choice or a martini made with vodka making it a Vodkatini. £7.00 Vesper Martini - this is the real James Bond martini from Fleming’s book Casino Royale, he named it after the double agent Vesper Lynd. This drink uses premium vodka and gin with a dash of dry vermouth and is “shaken not stirred” just as James asked. The Vesper is garnished with a lemon twist and perfumed with lemon oils £12.00 Tom Collins - was created by John Collins a bartender at the Limmer’s Hotel in London. The Tom Collins got its name because it was originally made with old Tom gin, This refreshing drink uses Plymouth gin, lemon juice, sugar syrup and topped with soda. Try it with scotch (Jock), rum (Pedro) or brandy (Pierre). Fruit variants available, ask your bartender. £7.00 Gin Ginie - created by Wayne Collins in 2002 this cocktail described in one word …… LUSH! Made with Plymouth Gin, Plymouth sloe gin, mint leaves, lemon juice and sugar syrup. It is served long over crushed ice. £7.00 Singapore Sling - the original drink was created between 1910 & 1915 in the Raffles hotel in Singapore, and was originally called the Straits Sling. It was renamed Singapore sling between 1922 and 1930. This drink is a combination of Plymouth Gin, Cherry brandy, Benedictine, Cointreau, lime juice, bitters and a choice of either pineapple juice or soda. £7.00 Mayflower Martini - another great cocktail created by Wayne Collins in 2002, which balances English flora and fruits. The cocktail consists of Plymouth Gin, Apricot brandy, elderflower cordial, lemon juice and organic apple juice and is served in a cocktail glass. £7.00 Blighty - This British twist on the Cuban Classic is phenomenal. Fresh cucumber, white sugar, mint & lime all muddled together, using Hendricks gin and finished with tonic. This makes for an amazing long & refreshing drink, just what the doctor ordered. £9.00 Bramble - this is the godfather of contemporary classics created in the mid-80s by Dick Bradsell at Fred’s club, Soho, London. This drink uses Bombay Sapphire Gin, lemon juice, sugar syrup and a blackberry liqueur lace. This is a short drink served over crushed ice £7.00 Negroni - stories say that the Negroni was invented at Café Casoni in Florence in 1919. it was created by a bartender named Fosco Scarselli, and named after Count Camillo Negroni who simply asked Fosco to add gin to his favourite drink; the Americano to give it a bit of a kick. The Negroni however was not seen in any cocktail books until 1947. It consists of equal measures of gin, sweet vermouth and Campari and is well known as being a fantastic aperitif. £8.00 White Lady - also know as a Chelsea Sidecar. The white lady is basically a sidecar but is made with gin in place of brandy. The other ingredients consist of lemon juice and Cointreau, an egg white is optional. It is said that the White Lady was invented in Ciro’s Club, London in 1919 and was created by Harry MacElhone. However Harry originally used white crème de menthe instead of gin. £7.00 Wibble - is another drink created by Dick Bradsell but this time it was in response to a challenge given to him by Plymouth gin. This drink is said to make you wobble but not fall over. It consists of Plymouth gin, Plymouth sloe gin, grapefruit, lemon, sugar syrup and crème de mure. £7.00 RUM Mojito - this derives form a drink invented 1586, by Richard Drake, an English pirate, who mixed aguente (unrefined rum), sugar, lime and mint together and called it a ‘Drak’. The drink now known as the Mojito originated in Havana in the late 19th century and became popular in the 1930s. Made with Bacardi rum, sugar, mint, lime and an optional soda top. This has been one of the most popular cocktails world wide for the last few year. For a little bit more have one made with a premium rum. £7.00 Caipirinha - is known to be the national drink of Brazil, where over 2million litres of Cachaca rum is consumed. The name means ‘little countryside drink’. Using Cachaca, lime and brown sugar this drink is served short over crushed ice. Try it with a fruit variant or enhance your flavour with a choice of Cachaca. £7.00 Daiquiri - a classic that was created by Mr Jennings Cox, an American mining engineer who was working at a Cuban copper mine outside Santiago, in 1896; the drink originated its name after the mine in which he worked. This drink consists Bacardi rum, lime and sugar syrup. Try it with a fruit variant or a premium rum £7.00 Reggae Rum Punch - Let the steel drums guide your rhythm with this fruity rum number, this is the most popular punch in Jamaica. Using Appleton VX rum, strawberry liqueur, strawberry, orange juice, pineapple juice and lime. As a variation try a passion fruit and basil punch. £8.00 Mai Tai - this refreshing drink created by Victor Jules Bergeron, a.k.a Trader Vic, was created in 1944 in his Oakland restaurant. He had two friends from Tahiti, who after they had a sip they exclaimed ‘Mai Tai – Roa Ae’ this in translation is ‘Out of this world – the best’ and you’ll know why after you try it. Made with Angostura 1919, Cointreau, lime juice, orgeat and a drizzle of grenadine. This is a short drink and is served over crushed ice. £8.00 El Salvador - it’s a great short drink. It consists of Frangelico which is a hazel nut liqueur, rum, lime and grenadine and is served in a cocktail glass. This cocktail is beautifully balanced in flavours and after one you will be going nutty for another. £7.00 Hurricane - was created by Pat O’Brien in New Orleans in the 1940s. the story is that Pat was in desperate need to get rid of barrels and barrels of rum which the southern distributors forced upon him. He mixed the rum with passion fruit, lime, orange and pineapple and served it in glass shaped like a Hurricane Lamp. £7.00 Swizzle - was created in the Caribbean in the early 1800’s and was named after the device that the drink was stirred with. These stirrers were made from long pealed stems of a plant with a fan like branch of roots the twigs were placed roots down in the drink and quickly twirled to mix the drink. The swizzle consists of dark rum, lime, sugar, angostura bitters, topped with soda. £7.00 WHISKEY Manhattan - the origin of this cocktail is also unclear, the best account is that when this drink was made at a party, held by Winston Churchill’s mother, to aid the mayor of New York, who was running as a candidate for the 19th President; the Manhattan then began. Have this drink your way, sweet, dry or perfect, combining Jim Beam Black, vermouth and bitters. Try it with premium bourbons or your choice of whisky. £7.00 Old Fashioned - brought to the Old Waldorf in the days of its ‘sit-down’ bar and in honour of Col. James E. Pepper, of Kentucky, and was created at the famous Pendennis club in Louisville. This drink is a true classic and needs time to create and enhance the volume; made with Jim Beam Black, Demerara sugar, orange peel and orange bitters. Try it with an American twist using maraschino liqueur and fresh orange. Bourbon not your thing? Try it with rum or brandy. £7.00 Mint Julep - the name julep derives from the Arabic word julab, which means rosewater but in the pharmaceutical world julep means sweet. There is no clear story of origin except that it was made in south of the United States and is the traditional drink associated with the Kentucky derby. The cocktail consists of bourbon, sugar, mint and water. £7.00 Kentucky Blizzard - this is fruity alternative for those that don’t like drinking strong whiskey cocktails. Consisting of bourbon, cranberry juice, lemon and sugar syrup, it certainly goes down easily. £7.00 Whiskey Sour - this is what the name suggests. It consists of the whiskey of your choice, lemon, a dash of sugar, an optional egg white to thicken the texture and a dash of angostura bitters. This is a short drink served over crushed ice and is very refreshing. If you like the sound of the sour but you don’t like whiskey then the sour is also available in any spirit or liqueur. We suggest an Amaretto and cherry sour. £7.00 The New York Cocktail - New York New York, known for its fantastic taste in drinks and it certainly shows in this cocktail. The New York cocktail is a fruity, sweet drink, gently balanced with the citrus juice of a lemon and a dominant whiskey flavour. Served in a cocktail glass this is the perfect drink for lazy afternoon. £7.00 BRANDY Sidecar - created in the early 1900s at Harry’s New York bar in Paris. The cocktail was named after their favourite patron, a French man whose choice of transportation was to and from the bar was a chauffeur – driven motorcycle sidecar. This has a great balance between strength and sweet and sour, and is known to be the inspiration to the Margarita and Daiquiri. It consists of brandy, lemon, Cointreau and is served in a cocktail glass with a sugar rim. £7.00 American Beauty - is a beautiful, fruity drink with a hint of mint. It consists of Remy Martin, white crème de menthe, dry vermouth, orange juice with a port float on top and is garnished with a rose petal. £7.00 B&B - is made with brandy and D.O.M Benedictine and served in a short glass over ice. Benedictine is a French herbal liqueur made with 27 different plants and spices and is known as being the oldest liqueur continuously made. Invented in 1930 when consumers mixed the two ingredients to create a drier taste. This is the perfect digestif. £7.00 Brandy Crusta - invented in the mid 1800s at Santana’s Saloon in New Orleans. The brandy crusta consists of Remy Martin, Cointreau, lemon and maraschino liqueur. It is characterized by a sugar rim and lemon spiral. £7.00 TEQUILA Margarita - Fransico ‘Pancho’ Morales, from Mexico, was famously renowned for pouring the 1st one of these in 1942; he was working in Tommy’s Bar and couldn’t remember what a customer ordered and came up with the Margarita. This sharp drink uses tequila, Cointreau, lemon and lime juice and a dash of agave syrup. Try it with one of our premium selections of tequila or try it with a fruit variant, ask your bartender for the choices. £7.00 Passion of Mexico - Created at the Seattle Hotel in 2007 by Tim Garratt. This perfectly balanced drink was Tim’s first creation at the Seattle and was entered into the regional heat for Diageo World Class Competition. The drink combines tequila with grapefruit juice and fresh passion fruit, a dash of mandarin liqueur and a passion fruit liqueur sink, this helps create not just a drink that tastes great but one that looks great too. £8.00 El Diablo - the devil himself would drink this drink if he had a choice. The El Diablo consists of tequila, lime, crème de cassis and ginger ale. It’s an alternative way of drinking tequila in a margarita as its a little sweeter, a tad fruitier and gets a sparkle from the ginger ale. All in all a very satisfying drink. £7.00 Tequila Fizz - is very similar to a Tom Collins but uses tequila instead of gin. This is a very refreshing drink and is superb on a hot sunny day. Try a silver fizz which is made with an egg white or a green fizz that is made with a dash of crème de menthe £7.00 BUBBLY Classic Champagne Cocktail - this drink has been around since the late 1800s and was created by John Dougherty, at a New York cocktail competition. This classic cocktail uses brandy, brown sugar, angostura bitters, topped up with champagne. Try it with a premium cognac. £8.00 Kir Royale - a drink that originated from the farm workers in Burgundy, they mixed white wine and Crème de Cassis, and called it a Kir. The name originated from Canon Kir, who was made Mayor in 1945 of Dijon. The updated version substitutes the white wine for Champagne and still uses Crème de Cassis. £8.00 Bellini - created by Guiseppi Cipriani in 1948 at Harry’s Bar in Venice, this was named in honour of the Venetian painter Bellini; whose art had a luminous tone which he combined with white peaches that are in season for 4 months of the year. Sticking to the originally recipe, we at the Seattle use white peach and prosseco £8.00 French 75 - a creation by Henry MacElhone at Henry’s Bar in Paris in 1925. Named after the famous fire power of the French 75 light field gun used in WW1. This drink combines Plymouth Gin, lemon juice, sugar and is topped with Champagne. £8.00 MOLECULAR Inspired to create something different Molecular is used to create different textures within a drink Molecular Cosmo - similar to a normal cosmopolitan, the drink consists of citrus vodka, cranberry juice and lime. However this time the talented bartenders at the Seattle have created for you a Cointreau and gold leaf caviar that is served on the side, it’s your choice to eat them separately or in the drink. £9.00 Pearls and Champagne - This sparkling cocktail uses Cointreau caviar served in a cocktail consisting of lemon, sugar and champagne.
